Chocolate Chunk Cookies and Lemon Marinade Chicken

Since it's the weekend I have a lot of time to bake some homemade chocolate chunk cookies. I decided to make them earlier today because I want to bring it to church tomorrow for my nursery kids at church. Well, hubby made some pork steaks tonight and paired with some white steam rice.

On the other hand, I also decided to marinate some chicken legs so it will be ready for Monday. I am excited to go to church tomorrow as well because I will see my nursery kids. What's for dinner folks?

My husband is a huge fan of ice tea, and one of his favorites is green tea. Aside from the great taste of green tea, he also enjoys the many health benefits of tea, especially since green tea is loaded with antioxidants. I have noticed that he often even picks which restaurant to eat at based on their selection of tea.

I Am a Snuggie Lover


Where I live the winter season can be incredibly cold and my husband and I love to stay inside and cover up during these cold months and watch movies while my husband loves to play video games. One of the best new inventions that I have seen is the snuggie, which is basically a blanket that you can wear. My husband was so excited because he found several snuggies with his favorite video game characters, although the selection at most local stores is limited. If you want to purchase a snuggie that is right for you, your best bet is to buy a snuggie online.

Pineapple Upside Down Cake

I almost forgot to share the recipe of the Pineapple Upside Down Cake that my husband baked awhile back. But without further ado here is the recipe that he followed from Betty Crocker.

Ingredients:

1/4 cup butter
2/3 cup brown sugar
6-9 pineapple slices in can (14 ounce), drain
9 pieces of cherries without stem (optional)
1 1/3 cup all purpose flour
1 cup granulated sugar
1/3 cup shortening
1/2 tsp salt
1 1/2 tsp baking powder
3/4 cup milk
1 egg

Procedure:
  1. Heat oven to 350°F. In 9-inch square pan, melt butter in oven. Sprinkle brown sugar evenly over melted butter. Arrange pineapple slices over brown sugar. Place cherry in center of each pineapple slice.
  2. In medium bowl, beat remaining ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Pour batter over pineapple and cherries.
  3. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture can drizzle over cake; remove pan. Serve warm.

Nursing Apparel


Finally, my sister who is a registered nurse in the Philippines is taking her education further by enrolling to a graduate school to pursue her dreams of getting a Master’s Degree. She is currently working as a head nurse in one of the many hospitals in the Philippines and she continues to help my family financially just like what my other sisters and I did.

Since her birthday is fast approaching I was thinking of sending her some new nursing uniforms that she can wear while on duty. She had shared with me that she needed a makeover with her medical wardrobe since they are now allowed to wear custom scrubs ones a week. Upon hearing this wonderful news from my sister I started to visit some websites and I found out that Blue Sky Scrubs are having their clearance scrubs sales today.  Guess what? Filipino Style Breakfast

I was happy that I was able to make some breakfast for hubby and I yesterday. I cook some garlic fried rice with sunny side up eggs, scramble eggs and sweet pork sausage (longanisa). I was delighted that my husband ate the food because he rarely eats his breakfast meal. I took some pictures to share here and I hope everyone will like it. Happy weekend guys!
