Chicken Menudo


I got the chance to make one of my favorites Filipino dish this week called Chicken Menudo. I decided to cook this dish because I have all the ingredients I needed in my fridge. You will find the procedures on how to make this dish below. Comments are welcome. Enjoy!!!!

Ingredients:

1 lb boneless chicken breast, sliced into cubes
3 medium size potatoes, cut into bite size
2 medium size carrots, cut diagonally
3 cloves of garlic, crushed
1 small onion, sliced into small pieces
1 small can chicken broth
1 tbsp soy sauce (optional)
1 small can tomato sauce
cooking oil
2 medium size jalapeno, cut diagonally (optional)

Steps:

1. Heat cooking oil in the pan. Add onions and garlic and saute the sliced boneless chicken till brown.
2. When the meat turns brown  add the soy sauce plus add the potatoes and carrots and saute for at least 2-3 minutes before adding the chicken broth. Let it boil till meat is cook and add water if needed.
3. Add tomato sauce and let it boil again. Add salt and pepper if needed.
4. I added the jalapeno to give the dish a little kick. Served hot with rice and voila you got a delicious meal easily prepared for you and your family!
