Fried Chicken Adobo
I made some Chicken Adobo last night with a little twist to it, I fried it and paired it with steam white rice. Take a look the ingredients and procedures below.
Ingredients
2 pounds of chicken (any parts will do)
4 tbsp soy sauce
4 tbsp vinegar
salt and pepper to taste
2 cups water
3-5 pieces of bay leaves
1/2 cup cooking oil
Steps
1. In a big pot combine all liquid ingredients together with the chicken.
2. Bring it to a boil and add bay leaves, salt and pepper
3. Simmer for 30 minutes or more until chicken is tender
4. Set aside chicken and place the oil in a cooking pan and apply heat
5. When the oil is ready add the chicken and fried it for 3-5 minutes till it turns golden brown
6. Serve hot with steam white rice or a side dish of your choice.
7. Enjoy and share!

Texas is hot in the summer!
When I decided to move to Texas from a much more northern state I was concerned about a few things. Will the food be too hot for my delicate little pallete? Will there be saloons on every corner that I can stager up to and walk through the swinging doors? Will there be tumbleweeds in the street and dust all over my cowboy boots? Ok so I didn’t know a whole lot about the state except for what I have seen in old western movies and I definitely had a lot to learn! One of my legitimate concerns was how it gets in Texas during the summer months. I didn’t even have central air conditioning in my old house and it was comfortable in the summer so I was pretty concerned about what it would be like in Texas where you practically combust when you walk out in to the summer heat. I have heard that energy costs are sky high because of the extreme heat but I decided to shop electricity RATES TEXAS to find the best rates.

Beef Jerky
I didn't realize that eating beef jerky can be so addicting especially when you are reading history books. I really love the taste of peppered jerky plus it actually motivates me to continue reading and not fall asleep. Since both my classes are more into reading and book review I have no choice but to look for some outlet to give me motivation to read and learn.
I may not be in the campground right now but I am eating beef jerky and loving it!

Start the Day Right with a Healthy Breakfast
- Go for whole wheat bread that is rich in fiber. Leftover turkey or chicken from dinner could be used for a healthy sandwich. You can scramble egg whites and add a few slices of lettuce to make it complete.
- Cereals are also another healthy breakfast option. Whole grain cereal snacks with a few slices of fresh fruits will provide the body with vitamins and minerals. Cook oatmeal and mix it with non fat milk.
- Prepare a healthy smoothie and skip coffee. Several websites offer healthy breakfast recipes that you can try at home. Smoothies are a great option especially for those who are always in a hurry in the morning. A blend of fruits and vegetables makes it an ideal and complete drink that can fill your stomach in the morning.

Holiday Theme Donuts
I don't normally crave for donuts at times but for some reason today was a different story. One of my friends from work brought some Krispy Kreme donuts earlier today and I end up eating three pieces of donuts while I was at my place of work today. I was actually surprised because I really enjoyed eating them. Check out these delicious looking donuts below!
