I like to coupon and it is not a secret. I've been couponing since 2011 and counting. To coupon is like having a full time job but I consider them a hobby and talent because I enjoy them so much. When my deals go through as plan I feel satisfied and accomplished. I coupon also because I send Balikbayan Boxes to my family in the Philippines and it can be very expensive if you do it often.

Slowly-Roasted Glazed Pork: Credit to Tasty by Buzzfeed

I've always been a fan of Tasty by Buzzfeed ever since I saw an article on Facebook. One of the many recipes that catches my attention is the Slowly-Roasted Glazed Pork below. I did make a few changes according to my taste but overall the result was phenomenal. By the way, the recipe below is the one I saw on Facebook. Feel free to grab it or modify it according to your taste buds.


INGREDIENTS
1 cup plus 2 Tbsp. soy sauce, divided
¼ cup granulated sugar
3 Tbsp. chopped garlic
¼ cup chopped scallions
2–3 pounds boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 Yukon potatoes, diced
2 Tbsp. olive oil
Kosher salt
Freshly ground black pepper
1 cup packed dark brown sugar
½ cup honey

PREPARATION
Preheat the oven to 275ºF.

In a large bowl, combine one cup of the soy sauce with the sugar, garlic, and scallions, stirring until mixed.

Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in.

Place the pork in the marinade and toss to coat evenly. Marinate for one hour.

On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet. Bake one to one and a half hours, depending on the weight of the pork.

Raise the heat of the oven to 500ºF.

In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth.

Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top. Bake for 20 minutes until sugar is dark brown and caramelized, and the top of the pork is crispy.

Remove the vegetables and pork from the tray, making sure to save all the juices.

Slice the pork into ½-inch slices, and plate with the roasted vegetables. Spoon the reserved pan juices on top of the pork, and enjoy!

Chicken Menudo


I got the chance to make one of my favorites Filipino dish this week called Chicken Menudo. I decided to cook this dish because I have all the ingredients I needed in my fridge. You will find the procedures on how to make this dish below. Comments are welcome. Enjoy!!!!

Ingredients:

1 lb boneless chicken breast, sliced into cubes
3 medium size potatoes, cut into bite size
2 medium size carrots, cut diagonally
3 cloves of garlic, crushed
1 small onion, sliced into small pieces
1 small can chicken broth
1 tbsp soy sauce (optional)
1 small can tomato sauce
cooking oil
2 medium size jalapeno, cut diagonally (optional)

Steps:

1. Heat cooking oil in the pan. Add onions and garlic and saute the sliced boneless chicken till brown.
2. When the meat turns brown  add the soy sauce plus add the potatoes and carrots and saute for at least 2-3 minutes before adding the chicken broth. Let it boil till meat is cook and add water if needed.
3. Add tomato sauce and let it boil again. Add salt and pepper if needed.
4. I added the jalapeno to give the dish a little kick. Served hot with rice and voila you got a delicious meal easily prepared for you and your family!

Pork Estofado


 I have been cooking a lot lately and I loved it. Moving to another city in Texas has been great financially but we are terribly missing El Paso and would love to go back and settle there one day. When I am not working, I usually have plenty of time to make food or baked any goodies that my husband love. Anyway, last week I cooked several Filipino dish but there's one dish that really stood out from the rest. The dish is called Pork Estofado. I got the recipe from Panlasang Pinoy but I tweak the recipe to suit my taste and needs. For instance, I added some potatoes since my husband like potatoes a lot.

Ingredients:

 2 lbs pork belly or (any kind will do)
3-4 ripe plantain, peeled and sliced
2 medium carrots, slice
2 medium potatoes, slice
3 cloves garlic, minced
1 tbsp brown sugar
1/2 c soy sauce
3 pieces dried bay leaves
1/4 cup cane vinegar
1/4 tsp black pepper
1 1/2 cup water
cooking oil
salt to taste

Steps:

1. Heat the oil in a cooking pan.
2. Saute the garlic until it turns a little brown.
3. Add the meat and cook for 2 minutes.
4. Add-in the soy sauce, water, bay leaves and ground black pepper. Let it boil and simmer for 30-40 minutes (till meat is tender).
5. Add vinegar and sugar. Cook for another 15 minutes (add water if needed).
6. Add the potatoes and carrots. Then add the banana. Cook for another 10 minutes.
7. Add salt to taste. Serve hot with rice!

Outdoor Party Ideas and Essentials

There’s nothing that can compare with getting together with friends and family to enjoy the summer months sunshine. Having a few refreshing drinks while a mouthwatering steak sizzles on the barbecue - what’s not to love?



 Dependent upon where you live this could be a good idea, or something of a gamble. Some places can almost guarantee great weather to get a summer party in the great outdoors whereas others can let you down badly at the last minute and with the least amount of notice.

So what can you do about it?

No, cancelling the party will not be an option; neither is all piling into the kitchen and putting muddy footprints all over the best carpet.

The secret is to be prepared. Just a few well thought out and planned items can help to make your party successful whatever the weather (well, almost).

When you organize a party in your back yard you don’t only have to worry about your guests getting cold or wet, you also may need to worry about them getting sunstroke.

You need to make sure that there is plenty of shade to be used as required, whether that means shelter from the summer showers or shelter from your sweltering sunshine. Make sure that there are several shady places for your guests to gather as and when they want to.


This can include something as simple as installing a sail shade canopy to the patio, a number of well placed sun shade patio umbrellas or even a fully fledged gazebo. Incidentally, a gazebo with side netting can also provide great respite from another potential problem at outdoor parties - uninvited guests arriving in the form of bugs and insects.

Depending upon the layout and vegetation in your garden or yard you just might take advantage of the shade which is already available. If needed, how about clearing out the opening and garage up the door to provide an unexpected emergency shelter? Think about installing a sail shade canopy between the trees from the back yard? Perhaps you are lucky enough to have lots of natural shade from trees, hedges or have a shed where you could take cover if necessary.

No outdoor party will ever be complete without having a barbecue. Guys love to barbecue so it affords the women the chance of a well earned break. Well, just as long as they have already bought the meals, prepared the meal and are able to run in and out of the house carrying and fetching the foodstuff to the dude standing from the barbecue together with the apron, tongs in one hand and a tin of beer in the other then they will have a well earned break. (Sorry, couldn’t resist).




 You should also think on how to keep the drinks cold when the sun ishot and hot, hot.

You may have to be a little more creative in your thinking if you aren’t lucky enough to offer an outdoor refrigerator. A few buckets of ice with beer and soda bottles placed in them will work well for a few hours. This can also make a superb drink cooler - fill it with cold water and a few ice cubes and add your drinks as required in case you have children with a paddling pool.

Filipino Skinless Longganisa ( Pork Sausage)

I finally made my first ever homemade longganisa (Filipino cured pork sausage) about a week ago. I could not be more happier because my first attempt  was a success. I was able to make 2 dozens of cured pork sausage which we consumed within two days. I had follow a simple recipe which I got from my mother who is a great mentor to me when it comes to cooking. Take a long at the simple ingredients below.

Ingredients:
1 pound ground pork
1/4 cup brown sugar
2-4 tbsp Worcester sauce.
3 tbsp soy sauce
salt and pepper
1 tbsp mince garlic
1 tbsp mince onion
carrots (optional)
wax paper (cut into 4.5 inches x 3 inches)

Procedure:
1. Mix all ingredients and marinate for at least 3 hours.
2. Roll a small amount of the mixture in a wax paper
3. Place the rolled Filipino sausage in the freezer for 3 hours or until ready to cook
4. When you are ready to cook, heat oil in a frying pan or wok
5. Unwrap the sausage and fry in batches in hot oil until meat turns golden brown
6. Place it on a paper towel to drain any excess oil
7. Serve with rice and vinegar-garlic dip sauce

Home Cooked Meals Are the Best!


I've been trying to prepare homemade meals at least three to four times a week despite my busy schedule at work. My husband truly appreciates when I make time to cook for both of us. Plus, dining out is expensive if we do it every day. Anyway, these past few weeks, I had cooked dishes such as Orange Chicken, Chicken Bicol Express, Noodles with chicken and Pork Adobo and so forth. Check out some of those recipes I've prepared so far!
